Whipped Sweet Potatoes
2 large sweet potatoes
½ medium white potato
6 T maple syrup
½ C unsalted butter (at room temperature)
1 tsp chili powder
Cayenne (to taste)
1-2 tsp salt (to taste)
Peel and dice all the potatoes. In a saucepan, bring potatoes
to boil in water. Reduce heat and simmer until soft. Drain and
transfer potatoes to a food processor. Add maple syrup, salt,
cayenne, and chili powder. Process 1 minutes while adding butter,
a tablespoon at a time. Warm in pan and serve.
